Sick-Day

I have been sick with some cold for the past couple of days so I don't feel like cooking.  Tonight, my daughter, Lisa, made Split Pea Soup with Ham and other vegetables (carrots, onions, and a tomato).  It was delicious.  We really enjoyed it.  It was true comfort food.

We also had a Japanese pumpkin that we prepared in two ways.  David, my husband, did the cutting.  We made one dish that is Japanese-style with soy sauce, and the other dish was a warm pumpkin salad with onions tossed in mayonnaise and lemon, some salt.  Both were light and tasty.
Tonight's dinner was simple, for obvious reasons, but very satisfying.

Thursday Dinner with Lisa

This evening, I prepared a simple salad-- mixed green lettuce with some meat topping.  The meat topping was made with red bell peppers, green onions , enoki mushrooms and etc.and Japanese yakisoba.  I like to put lots of vegetables (carrots, onions, cabbage) in my yakisoba so it is healthy.  Lisa ate them too much.  David did not eat dinner so I made a very simple dinner.

Dinner Tonight

Tonight, I made renkon (lotus root) and naga-imo (sticky yam) with butter, miso and shoyu (soy sauce).  My family loves it and its easy to make.

I also made this stir-fry with pork, red peppers, yellow carrots, broccoli, onions-- basically lots of stuff.  For flavoring, I added shoyu, oyster sauce and mirin.
